Mango Chicken Salad

  • 2 Cups Dole Mango Chunks (frozen, partially thawed)
  • 6 Ounces Dole Butter Bliss (1 package)
  • 1 Cup Jicama (grated)
  • 1/2 Cup Cashews (toasted, chopped or almonds)
  • 1/4 Cup Green Onions (thinly sliced)
  • 1/4 Cup Poppyseed Dressing (bottled)
  • 2 Tablespoons Coconut Flakes (unsweetened, toasted)
  • Salt & Pepper (to taste)
  • 2 Chicken Breasts (grilled, sliced)
  1. Combine mango chunks, salad blend, jicama, cashews and green onions in large bowl. Toss with dressing to coat.
  2. Top with grilled chicken breasts and flaked coconut. Season with salt and pepper, to taste.
