Creamed Corn

  • 3 Cups Corn (fresh or frozen)
  • 3/4 Cup Milk (low-fat)
  • 1 Tablespoon Cornstarch
  • Dash Salt
  1. Place two cups corn, milk, cornstarch, and salt in a blender; blend until smooth.
  2. Transfer the puree to a medium saucepan, and add the remaining one cup corn.
  3. Cook over medium-high heat, stirring constantly, until the mixture simmers and thickens and the corn is tender, 5 to 7 minutes.
