Quinoa Berry Salad
Salad
- 5 Ounces Dole Baby Kale and Greens (1 package)
- 1 1/2 Cup Quinoa (cooked, cooled)
- 1 Cup Dole Blueberries (frozen, partially thawed)
- 1 Cup Dole Strawberries (frozen, partially thawed)
- 1/3 Cup Walnuts (chopped, toasted)
- 3 Dole Green Onions (sliced)
Salad Dressing – Honey Lemon Thyme Vinaigrette
- 1/4 Cup Lemon Juice (fresh)
- 1/4 Cup Olive Oil
- 2 Tablespoons Honey
- 1/2 Teaspoon Dijon Mustard
- 1 Teaspoon Thyme (freshed, chopped)
- Salt & Pepper (to taste)
Salad
- Combine salad blend, quinoa, blueberries, strawberries, walnuts and green onions in a large bowl; toss with Honey Lemon-Thyme Vinaigrette to taste.
Salad Dressing – Honey Lemon Thyme Vinaigrette
- Whisk together all ingredients until blended. Makes 2/3 cup. Refrigerate any remaining vinaigrette.
