Mango Chicken Salad
- 2 Cups Dole Mango Chunks (frozen, partially thawed)
- 6 Ounces Dole Butter Bliss (1 package)
- 1 Cup Jicama (grated)
- 1/2 Cup Cashews (toasted, chopped or almonds)
- 1/4 Cup Green Onions (thinly sliced)
- 1/4 Cup Poppyseed Dressing (bottled)
- 2 Tablespoons Coconut Flakes (unsweetened, toasted)
- Salt & Pepper (to taste)
- 2 Chicken Breasts (grilled, sliced)
- Combine mango chunks, salad blend, jicama, cashews and green onions in large bowl. Toss with dressing to coat.
- Top with grilled chicken breasts and flaked coconut. Season with salt and pepper, to taste.
