Avocado Chocolate Mousse
- 1 Avocado (ripe)
- 2 Tablespoons Honey
- 1/4 Cup Unsweetened Cocoa Powder
- 1/2 Teaspoon Vanilla Extract
- Pinch Salt (small)
- 2 Tablespoons Milk (sub dairy-free milk)
- 1 Cup Raspberries (washed)
- Put everything except raspberries into a food processor or blender. Break the avocado up into smaller pieces to make it easier on the machine.
- Process for 10-15 seconds, and then stop and scrape down the sides. Then process again until smooth.
- Serve topped with raspberries. Eat immediately or serve chilled. Do not let it sit too long in fridge, as the avocado will oxidize which alters the flavor.
