Quinoa Power Bowl

  1. Combine 1 cup quinoa with 2 cups water in a medium saucepan. Bring to a boil. Cover, reduce heat to low, and simmer until quinoa is tender, about 15 minutes. Quinoa holds lots of water, so you have to make sure you drain it thoroughly after it’s cooked.
  2. Skin the raw sweet potatoes and cut into small squares
  3. Heat oven to 400° F. Pierce each sweet potato several times with the tines of a fork. Place the sweet potatoes on a rimmed baking sheet lined with foil. Bake until tender, about 45 minutes. Or microwave sweet potatoes: Pierce the sweet potato skin 5-6 times, then place on a microwaveable plate and microwave for 5-8 minutes, rotating halfway through.
  4. Heat olive oil in a large saucepan over medium-high heat. Add the garlic and cook until soft, but not colored. Raise heat to high, add the stock and kale and toss to combine. Cover and cook for 5 minutes.
  5. Combine cooked quinoa, sweet potatoes, and kale with cut up avocado and tomatoes.
  6. Top with almonds and enjoy!
