Ingredients

  • 3/4 Cup Pamela's Products Gluten-Free All-Purpose Flour
  • 1/2 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1 Tablespoon Cinnamon
  • 1/2 Cup Brown Sugar
  • 1/4 Cup White Sugar
  • 2 Tablespoons maple syrup
  • 1/4 Cup Applesauce
  • 1/4 Cup Coconut Oil
  • 1/2 Teaspoon Vanilla
  • 1 1/2 Cup Gluten-Free Oats rolled
  • 1/2 Cup Raisins

Instructions

  1. Preheat oven to 350° F. Line two cookie sheets with Silpats or parchment paper.
  2. Mix together the flour, baking soda, salt, and cinnamon. Set aside.
  3. Mix both sugars, maple syrup, applesauce, oil, and vanilla together in a medium bowl.
  4. Add the flour mixture and stir until blended.
  5. Stir in the oats, followed by the raisins. Let sit for 10 minutes.
  6. Drop rounded tablespoonfuls onto the cookie sheets.
  7. Bake for 12-14 minutes.
  8. Let cool for about 5-8 minutes on cookie sheets, then carefully place on wire rack to cool.
