  • 15 Ounces Enjoy Life Chocolate Chips
  • 3 Cups Gluten-Free Coconut Macaroons crushed
  • 1 Cup Condensed Milk sweetened
  • Almonds whole, optional

Instructions

  1. In a medium bowl, mix sweetened condensed milk and coconut macaroons until it becomes a thick and sticky paste.
  2. Once mixed, use your hands to form and shape rectangles with the paste. Wetting your hands will help keep the paste from being too sticky.
  3. Arrange the bars on a baking sheet lined with parchment or waxed paper, and put into the freezer for about 20 minutes. This step is important, because it will make it easier to coat the bars in chocolate.
  4. *Optional, add almonds to the top of the bars
  5. While the bars are in the freezer, start preparing the chocolate. Put 2/3 of your chocolate chips into a microwave safe bowl.
  6. Microwave the chocolate for 30 seconds, stir, then repeat the process in 15 second intervals until it has all melted. You can also melt the chocolate on the stove top if you prefer.
  7. Once the chocolate has melted, add the remaining 1/3 and keep stirring until it is fully melted.
  8. When all the chocolate is melted, you can take the bars out of the freezer and start dipping them into the melted chocolate until the are fully covered (Be prepared for things to get a little messy!)
  9. Use one fork to remove the bar from the chocolate, and use another to scrape off excess chocolate from the bar.
  10. Return each bar back to the lined baking sheet.
  11. Once all the bars are covered in chocolate, let them sit for a few hours so the chocolate can set. You can also put the bars in the fridge to help the chocolate harden.
