Ingredients

  • 2 Cups Chocolate Chips semi-sweet
  • 4 Ounces Bittersweet Chocolate chopped
  • 2 Ounces Unsweetened Chocolate chopped
  • 1 Cup Pecans
  • 2 Tablespoons Butter salted
  • 2 Eggs
  • 2/3 Cup Sugar
  • 1/4 Cup Bob's Red Mill Stone Ground White Rice Flour
  • 1 Teaspoon Vanilla Extract
  • 1/4 Teaspoon Bob's Red Mill Double Acting Baking Powder

Instructions

  1. Preheat oven to 350°F.
  2. Grease a cookie sheet with unsalted butter.
  3. In a medium saucepan, melt one cup of the semi-sweet chocolate chips, the 2 oz. of unsweetened chocolate, and the 2 tbsp of salted butter.
  4. Remove from heat.
  5. Combine the eggs, sugar, rice flour, vanilla, and baking powder.
  6. Stir in the bittersweet chocolate pieces, the remaining chocolate chips, and the nuts.
  7. Drop teaspoonfuls of dough on the greased cookie sheet about two inches apart.
  8. Bake 8-10 minutes or until the surface of the cookie looks cracked.
  9. Let cool and serve.
