In 2003, I was diagnosed with Celiac Disease. After testing was complete, my doctor supplied me with a piece of paper that said, “…don’t eat food with these ingredients…” So, I ended up remoing about 15 bags of groceries from my pantry and refrigerator. Then the real work started. At that time there was limited information, so I decided to eat mostly “fresh foods”.I finally understood that this new lifestyle would become a job. Therefore, The Funky Muffin Bakery was born. I want to share my experience with those who have Celiac Disease and those that choose the gluten free lifestyle.
