Zesty Vegan Chickpea Salsa

Ingredients

  • 2 1/2 Cups Chickpeas canned, rinsed and drained
  • 1/2 Teaspoon Salt
  • 1 1/2 Teaspoon Cumin
  • 1 Clove garlic chopped
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 Teaspoon Red Pepper Flakes or 1/2 a fresh jalapeno, finely chopped
  • 1/2 Cup Black Olives pitted and roughly chopped
  • 2 Tablespoons Lemon Juice
  • 1/4 Cup Parsley
  • Salt and Pepper to taste
  • 1 Bag Frito Lay Scoops

Instructions

  1. Mix salt, garlic and ½ a teaspoon of the olive oil to form a paste.
  2. Add chilli pepper flakes or jalapeño and chop to combine.
  3. Transfer to a small bowl and add remaining olive oil. Set aside.
  4. In a medium bowl, combine chickpeas, olives, and parsley.
  5. Add the garlic paste and mix well.
  6. Add cumin and lemon juice, stir to combine, then taste for salt and pepper.
  7. Serve in tortilla chips.
