Vegetarian Quinoa Chili

Ingredients

  • 2 1/4 cups Vegetable Broth
  • 1/2 cup Quinoa uncooked
  • 15 oz can Black Beans
  • 1/2 28 oz container Tomatoes diced
  • 1/4 cup Red Bell Pepper chopped
  • 1/4 cup green bell pepper chopped
  • 1 carrot shredded
  • 1/2 onion chopped
  • 2 cloves garlic
  • 1/2 Chili Pepper small
  • 2 tsp Chili Powder
  • 1/4 tsp Cayenne Pepper
  • 1 1/2 tsp Salt
  • 1 tsp black pepper ground
  • 1 tsp Cumin ground
  • 1 tsp Oregano
  • 1/2 cup corn kernels

Instructions

  1. Stir broth, quinoa, and black beans in crockpot.
  2. Add remainder of ingredients and stir.
  3. Set slow cooker on high for 2.5-3 hours or low for 5-6 hours.
  4. Monitor the last 30 minutes - 1 hour for best results.
  5. Serve topped with sour cream or yogurt, avocado, and cheese.
