Pumpkin Bread Pudding

  • 1 Loaf Gluten-Free White Bread dairy-free
  • 1 15-Ounce Can Pumpkin Pie Mix
  • 3 Large Eggs
  • 1 Pint So Delicious Dairy-Free Vanilla Ice Cream melted
  • 1 Teaspoon Pumpkin Pie Spice


  1. Preheat oven to 350ºF. Spray an 8 inch square glass baking dish with cooking spray, or line with foil.
  2. Cut bread into cubes. There is no need to remove the crust. Put the cubes in the prepared pan.
  3. Mix melted ice cream with eggs, pumpkin pie mix, and spice.
  4. Pour custard mixture over bread cubes.
  5. Bake for 25-35 minutes.
  6. The bread pudding is done when set (you can insert a knife into the pudding and it comes out clean).
