Bring a pot of water to boil and add salt and olive oil. Once the water comes to a boil, slowly add the Polenta Valsugana flour and mix well with a wooden spoon for the time indicated on the package.
Remove the cooked polenta from heat. Once cooled, spread the polenta over a sheet of oven paper and cover with another sheet. With a rolling pin flatten to about 1/8 thickness.
Remove the top sheet and transfer polenta to the oven and bake for 10 minutes at 400F. Halfway through the cook time, cut the polenta into strips and then into triangles. Bake in the oven again until crisp
