Paleo Cauliflower-Crusted Chicken Tenders

  • 1 cup Cauliflower-Based Baking Mix (Paleo)
  • 1 tbsp Paprika
  • 1 tbsp Salt
  • 1 tbsp black pepper
  • 1/2 tbsp Garlic Powder
  • 1 tbsp dried thyme
  • 1 tsp Onion Powder
  • 1/4 tsp dried oregano
  • 1 Egg
  • 1/4 cup unsweetened original almond milk
  • 3 chicken strips (bone-in or boneless)


  1. In a zip top plastic bag, combine Cauliflower-Based Baking mix, paprika, salt, pepper, garlic powder, dried thyme, onion powder, and dried oregano. Seal bag and shake well.
  2. In a shallow dish, beat eggs and almond milk.
  3. Dip chicken pieces into egg mixture, shake off excess, then place in the bag with coating. Seal and shake until coated.
  4. Put coated chicken on baking sheet and bake, uncovered, at 350°F for 30-60 minutes or until juices run clear (longer times for large pieces and bone in). The chicken is thoroughly cooked and safe to eat when a meat thermometer reads 165°F.
