Apple Pie

  • 2 Apples
  • 1 cup Caremoli Gluten Free Pancake Mix (½ package)
  • 2 tbsp sunflower oil (or melted butter)
  • 1/2 cup cane sugar
  • 2 medium Eggs
  • 1/3 cup plant-based milk (or milk)
  • 1 tbsp vanilla-flavored baking powder
  • 1 grated lemon peel
  • 2 tbsp Sugar
  • 1 tbsp cinnamon powder
  • 1 tbsp powdered sugar to sprinkle


  1. Preheat static oven at 350° F (180°C)
  2. Whip eggs, cane sugar and grated lemon peel with an electric whisk for at least 3 minutes at a high speed, until you obtain a fluffy and clear mixture
  3. Add sunflower oil (or melted butter) and keep whipping with the whisk
  4. Add 1 tablespoon pancake mix previously mixed with the sifted baking powder and then 1 tablespoon soymilk. Alternate them until you finish whisking at medium speed
  5. At this point, the mix should be creamy and not too liquid
  6. Wash the apples, peel and cut them in thin slices
  7. Pour mixture in baking buttered pan
  8. Level the mixture with the back of a spoon
  9. Finally add apple slices one by one arranging them like spokes of a wheel making sure to occupy all spaces
  10. Mix sugar with cinnamon powder and spread it onto the cake making sure to cover all surfaces
  11. Bake the cake for approximately 45 minutes. Time is indicative and can vary according to the type of oven you have, so remember to always test readiness with a toothpick
  12. Let it cool down and once cold sprinkle powdered sugar
