“First Timer Mistakes on the Gluten-Free Diet: For Newbies and Celiac Vets too”

I use humor to get through my celiac disease diagnosis and living gluten-free in a world full of wheat. My aim is to educate the world about celiac disease and the importance of this wonderful “less than 20ppm” universe we live in. My first book, “Celiac and the Beast: A Love Story Between a Gluten-Free Girl, Her Genes, and a Broken Digestive Tract” was released in October 2013.

Erica will also be signing copies of her book at booth 115!

Going From Baker To Business Owner: Why I Started My Own Bakery and How I Make It Work

I’m the co-owner of Zest Bakery, a gluten-free bakery in the San Francisco Bay Area. I’m a self taught baker that was first introduced to gluten-free baking when I met my husband Patrick who has celiac disease. After years of experimental baking, we opened Zest Bakery in 2010 to fill a void on the SF peninsula for gluten- dairy- and soy-free products. I focus on marketing, R&D, and sharing a variety of allergen friendly and paleo recipes on our Zest Bakery blog.

“Converting your Family Favorite Recipes” Working to adapt your family’s favorite recipes rather than feeling overwhelmed that you have to eat all new foods and recipes.

I’m a 30-something wife, mother of two boys, and I have celiac disease. My hobbies are baking and collecting cookbooks and recipes. I’ve been cooking family-friendly gluten-free meals and treats since my celiac diagnosis in 2010, and am writing about my time in the kitchen at MyGluten-FreeKitchen.com.

“How I de-floured, then re-floured my pantry — making sense of gluten-free flours, and how to make your own multi-purpose flour blends”

I am a recipe developer, food photographer and a celiac. I always love a good challenge, so right after my positive endoscopy I got straight to work in the kitchen, developing gluten free versions of all my old favorite recipes. The meals I love the most are simple, seasonal and quick to prepare. My taste testers include my husband and three kids, who are especially thrilled when dessert is served.

“Great opportunity to be around vendors and educators that care! Gluten-free may be a trend for some people, but I’ll be celiac forever.”

-Megan from California

“Perfect place to take the entire family! Both my celiac and non-celiac kids had a great time”

-Jenny form Arizona

“We look forward to this event each year. We get to spend the whole weekend enjoying food, without having to ask “is that gluten-free?”

-John from Nevada
